Tofu is often described as rather tasteless, especially when eaten raw. However, you can use tofu along with a handful of basic ingredients that you'll almost always have in at home to create a delicious alternative to marinated feta. This dish tastes delicious as an appetizer or as a topping for a bowl.

½ organic lemon, grated zest and the juice
3 tbsp olive oil
1 tsp dried basil
1 tsp dried oregano
50 g pitted black olives, finely chopped
½ tsp salt
250 g tofu, cut into approx. 1 cm cubes

How it's done

In a bowl, mix the lemon zest and juice with all the other ingredients up to and including the salt. Mix in the tofu. Serve straight away or cover and marinate in the fridge for approx. 1 hr.

Good to know
Shelf life: Cover and keep in the fridge for 2-3 days.
Tip: The tofu cubes can also be served as soon as they have been prepared, but they taste better marinated.
