5dl coconut milk
2dl water
1 ½tsp ginger, finely grated
1stick lemongrass , halved lengthwise
3 kaffir lime leaves (Thai-Kit)
1tbsp lime juice
½tbsp sugar
a little salt
200g Karma Bio Tofu nature, cut into cubes
1 red chilli, deseeded, cut into thin rings
some basil leaves

How it's done

Bring the coconut milk, water, ginger, lemongrass and Kaffir lime leaves to the boil in a pan, cover and simmer for approx. 5 mins., stirring occasionally. Season with the lime juice, sugar and a little salt. Remove the Kaffir lime leaves and lemongrass, reduce the heat. Add the tofu, steep for approx. 5 mins., divide the soup into bowls, garnish with chilli, serve.
