3 tbsp olive oil
1 onion, halved, in fine slices
450 g mixed mushrooms
½ dl red wine
½ dl vegetable bouillon
salt and pepper to taste
50 g rocket
150 g soft cheese (e.g. Naturaplan organic Le Moelleux)

How it's done

Heat the oil, stir fry the onions and mushrooms for approx. 5 mins., add the wine, reduce completely. Pour in the stock, stir in half of the rocket and cheese, serve on warmed plates. Top with the remaining rocket and cheese.
