Possibly the simplest quiche in the world? You don't need to make the pastry or even wash up a bowl — the ingredients are simply mixed together inside the tortilla in a baking tin! This recipe is especially handy if you have leftover tortillas from your fajita night.

Quiche

1 wheat tortilla x
125 g mozzarella, torn into pieces
80 g plain cottage cheese
4 eggs, beaten
½ tsp Sriracha sauce, as desired
½ tsp salt
a little pepper
1 tomato, in slices
2 sprig basil, leaves torn off
½ onion, cut into rings

One springform pan (approx. 22 cm in diameter), base lined with baking paper, sides greased

Quiche

Place the tortilla in the prepared tin and press down on the base. Place the mozzarella on the tortilla base along with all the other ingredients up to and including the pepper, mix. Top with the tomato, basil and onion.

To bake

Approx. 40 mins. in the lower half of an oven preheated to 200 °C. Remove, allow the quiche to cool slightly until the bulging has subsided.
