This moist, delicious and warming baked oat muesli is reminiscent of brownies and makes a perfect sweet breakfast or a dessert that isn't too sugary. It is gluten-free, vegan and offers an irresistible combination of two textures: crunchy almonds and melt-in-the-mouth chocolate chips. Mmmm...!

Oat mixture

2 bananas
300 g rolled oats (gluten-free)
120 g almonds, coarsely chopped
80 g chocolate cubes (see note)
30 g cocoa powder
4 tbsp peanut butter
3 tbsp maple syrup
½ tsp baking powder
5 dl almond drink

Topping

40 g chocolate cubes (see note)

To bake

150 g vegan plain yoghurt substitute
½ banana, in slices

Utensils

One shallow baking dish (approx. 20 x 20 cm)

Oat mixture

Place the bananas in the dish, mash well with a fork.Add the oats and all the other ingredients up to and including the almond drink, mix well, smooth down.

Topping

Sprinkle with chocolate chips.

To bake

Approx. 30 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, cut into pieces, top with the yoghurt substitute and banana slices.

Good to know
Tip: If you have any leftovers, you can cover them and keep them in the fridge until the next day, when you can reheat them in the microwave or a non-stick frying pan.
