Turmeric mayonnaise

1 fresh egg yolk
1 tsp mustard
¼ tsp turmeric
1 tsp lime juice
1 dl sunflower oil
salt and pepper to taste

Peas

120 g frozen peas
salted water, boiling
3 piece radishes, sliced
½ bunch basil, finely chopped
3 sprig peppermint, finely chopped
1 tbsp white balsamic vinegar
½ tbsp olive oil
¼ tsp salt
a little pepper

Toasted bread

125 g bread, in 4 slices, toasted

Turmeric mayonnaise

Add the egg yolk, mustard, turmeric and lime juice to a bowl, whisk well. Add the oil drop by drop to begin with, then more gradually, whisking constantly to form a thick mayonnaise, season.

Peas

Cook the peas in boiling salted water for approx. 4 mins. until soft. Drain the peas, place in a bowl with the radishes and all the other ingredients up to and including the pepper, mix.

Toasted bread

Spread half of the turmeric mayonnaise onto the slices of bread. Top with the peas, decorate with blobs of the remaining mayonnaise.

Good to know
Tip: If you want to make an extra effort with the presentation, you can fill the mayonnaise into a small piping bag and pipe it onto the toast in wavy lines.
