The delicious combination of palm tree kale and feta is what makes this quick bread recipe so special. Quick breads like this one don't require any dried yeast. Instead, they use instant yeast or baking powder (like for the popular Irish soda bread). This makes it the perfect last-minute bread. It's ideal for brunch or a hearty breakfast with different types of cheese and cold cuts. It can be made with all kinds of different vegetables. In this recipe, the kale gives the bread a herby note, while the feta adds a tangy kick.

Dough

300 g white flour
150 g feta, finely crumbled
120 g cavolo nero, finely chopped
2 tbsp chives, finely chopped
1 parcel baking powder
¼ tsp salt
a little pepper
300 g plain greek yoghurt (0% fat)
¾ dl olive oil
2 eggs

One loaf tin (20 cm), lined with baking paper

Dough

Mix the flour, feta, palm tree kale, chives, baking powder, salt and pepper in a bowl. Mix the yoghurt, oil and eggs, pour into the bowl, mix well with a wooden spoon until you have a soft, runny dough. Transfer the dough to the prepared tin.

Bake

Approx. 40 mins. in an oven preheated to 180 °C (convection). Remove from the oven, allow to cool slightly in the tin, remove the bread from the tin and leave to cool completely on a rack.
