Popcorn

1 tbsp peanut oil
150 g popcorn

Orange caramel

120 g sugar
1 organic orange xxx
3 tbsp vodka
2 tbsp orange liqueur (e.g. Cointreau)
20 g butter
½ tsp sodium bicarbonate
¼ tsp salt
50 g cranberries, finely chopped
3 tbsp lemon zest grated, dried

Popcorn

Heat the oil in a wide pan. Add the corn kernels, cover immediately and leave to pop over a medium heat for approx. 6 mins. Place the popcorn in a bowl, set aside.

Orange caramel

Bring the sugar and orange juice to the boil without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the vodka and orange liqueur, reduce almost completely. Add the orange zest, butter, baking soda and salt, mix. Add the popcorn to the caramel, mix well with a wooden spoon until all of the popcorn is coated in the caramel. Add the cranberries and lemon zest, mix. Spread the popcorn on a baking tray lined with baking paper, leave to cool.

Good to know
Tip: Add one tablespoon of orange marmalade to the caramel.
Tip: Freeze the cranberries for approx. 30 mins. prior to chopping; this will help to prevent them from sticking together.
Note: Grated, dried lemon zest can be found in the baking aisle.
