Popcorn

1 tbsp peanut oil
150 g popcorn

Gin caramel

5 cl gin
2 juniper berries
120 g sugar
2 organic limes, grated zest and 2 tbsp of juice
20 g butter
½ tsp sodium bicarbonate
¼ tsp salt

Popcorn

Heat the oil in a wide pan. Add the corn kernels, cover immediately and leave to pop over a medium heat for approx. 6 mins. Place the popcorn in a bowl, set aside.

Gin caramel

Place the gin and juniper berries in a measuring cup, puree, pour through a sieve into a small bowl. Boil the sugar in a pan without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the gin, lime juice, butter, baking soda and salt, mix, reduce almost completely. Add the popcorn and lime zest, mix well with a wooden spoon until all of the popcorn is coated in the caramel. Spread the popcorn on a baking tray lined with baking paper, leave to cool.
