Peanuts and chocolate are a delicious combination that everyone is familiar with. These granola bars are a real treat for breakfast, as a snack or even as a dessert. They are crunchy in texture and yet melt in the mouth. This recipe is sure to leave all other energy bars for dust!

Granola mixture

120 g unsalted peanuts, roasted, roughly chopped
100 g rolled oats
20 g coconut flakes
20 g sesame seeds
1 pinch salt
1 dl agave syrup
50 g coconut oil, melted

Chocolate glaze

150 g vegan dark chocolate, finely chopped
20 g unsalted peanuts, roasted, roughly chopped
1 tbsp coconut flake

One square springform pan(20 x 20 cm), lined with baking paper

Granola mixture

Mix the peanuts, oats, coconut flakes, sesame seeds and salt in a bowl. Combine the agave syrup and coconut oil, add to the dry ingredients and mix well. Transfer the mixture to the prepared tin, smooth with a spoon and press down firmly.

To bake

Approx. 25 mins. in the centre of an oven preheated to 180°C. Remove and leave to cool in the tin.

Chocolate glaze

Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth. Pour the chocolate over the baked granola, sprinkle with the peanuts and coconut flakes. Cover and chill for approx. 1 hr.

Bars

Carefully remove the baked granola from the tin, cut into approx. 12 equal-sized bars using a bread knife.
