Skewers

1 tbsp white balsamic vinegar
1 organic lime, grated zest and the juice
2 tbsp olive oil
½ tbsp liquid honey
1 tbsp thyme leaf
¼ tsp salt
250 g cherries, pitted
150 g Kalamata olives, pitted
12 short wooden skewers (soaked in water for approx. 30 mins.

Barbecue (charcoal, gas, electric barbecue)

½ baguette (approx. 130 g), cut diagonally into approx. 12 slices

To serve

150 g soft goats' cheese

Skewers

Whisk the balsamic, lime zest, lime juice, oil, honey, thyme and salt in a bowl. Add the cherries and olives, mix and thread alternately onto the skewers. Set aside the remainder of the dressing.

Barbecue (charcoal, gas, electric barbecue)

Brush both sides of the sliced bread with half of the reserved dressing. Cover and grill the skewers over/on a medium heat (approx. 200°C) for approx. 4 mins. all over. Grill the bread alongside for approx. 2 mins. on each side.

To serve

Spread the cheese on top of the crostini, add the skewers, drizzle with the remainder of the dressing.

Good to know
Tip: Use cream cheese instead of soft goat’s cheese.
