Even on hot summer days, I often fancy a chocolate brownie. The thought of turning the oven on, however, is far less appealing. That's how I came up with these brownies – they don't require any baking! They comprise just 5 ingredients, including healthy beetroot, and are simply sweetened with dates.

Brownies

250 g dark chocolate, coarsely chopped
200 g boiled beets, cut into pieces
100 g Medjool dates, pitted
50 g white almond cream

Strawberries

200 g strawberries, in dics

One brownie tin (approx. 24 × 24 cm), lined with baking paper.

Brownies

Melt the chocolate in a thin-sided bowl over a gently simmering bain-marie, stir until smooth. In a blender, puree the beetroot, dates and almond butter with the chocolate. Transfer the mixture to the prepared tin, smooth down.

Strawberries

Place the strawberries on top of the brownie mixture, cover and freeze for approx. 2 hrs. Slice to serve.
