Beans in basil & tomato sauce is a dish that I love to cook in summer, however it's a tasty option in the colder months, too. I make this dish a lot as it tastes great any time of the day. Whether you have it as a side dish or on toast as a hearty breakfast, it's simply delicious.

1tbsp olive oil
1 red onion, finely chopped
2 garlic cloves, finely chopped
1tsp rosemary, finely chopped
2tbsp tomato puree
2tins chopped tomatoes (each approx. 250 g)
1tbsp basil, finely chopped
2tbsp crema di Balsamico (balsamic cream)
2tins white beans (each approx. 250 g), rinsed, drained
1 ½dl water
1tsp salt
a little pepper
Purchase ingredients now

How it's done

Heat the oil in a pan. Sauté the onion, garlic and rosemary. Add the tomato puree and cook briefly. Add the tomatoes and all of the other ingredients up to and including the water, simmer for approx. 20 mins., season. Plate up the beans, garnish with basil.

Good to know
Serve with: Rosemary potatoes and salad.
