50g clarified butter

Muffin batter

200g white flour
100g feta, crumbled
50g green olives, pitted, finely chopped
¾tsp salt
3 eggs
3dl milk
50g butter, melted, left to cool

To bake

100g feta, crumbled

12-hole muffin tray (each hole approx. 7 cm in diameter)

How it's done


Grease the holes with butter, slide the muffin tray into the lower half of a cold oven. Preheat the oven to 220°C.

Muffin batter

Mix the flour, cheese, olives and salt in a bowl. Pour in the eggs, milk and butter, mix for approx. 1 min. using the whisk on a hand mixer. Spoon the batter into the hot, greased holes.

To bake

Approx. 30 mins. in the lower half of the preheated oven. Remove from the oven, allow to cool slightly, scatter the feta on top.

Good to know
Tip: Mix finely chopped thyme into the batter.
