When you're on the go with the family, you need plenty of supplies to make sure that everyone is well fed. This all-in-one sandwich is quick to prepare and practical to pack. I wrap it in baking parchment and slice it into individual sandwiches when we're ready to eat.

Chicken breasts

2 chicken breasts (approx. 140 g each)
½ tsp curry powder
¼ tsp salt
a little pepper
1 tbsp olive oil for frying

Spread

150 g cream cheese, plain
125 g low-fat quark
1 organic lemon, use grated zest only
½ tsp salt

To fill the baguette

1 baguette (approx. 220 g)
1 carrot, coarsely grated
30 g Micro Greens
salt and pepper to taste

Chicken breasts

Season the chicken. Heat the oil in a frying pan, fry the chicken breasts in the oil for approx. 3 mins. on each side. Leave to cool, cut into pieces.

Spread

Combine the cream cheese with the quark and lemon zest, season with salt.

To fill the baguette

Cut the baguette in halve lengthwise, cover the lower half with the cream cheese spread. Top with the carrot, chicken and micro greens, season. Place the other half of the baguette on top. Slice to serve.

Good to know
Tip: Wrap in baking parchment and secure with twine. When you come to slice the baguette later, everyone can have their own sandwich.
