Cauliflower

1 cauliflower (approx. 600 g), cut into florets
2tbsp olive oil
1tbsp Za'atar (spice mix)
½tsp salt

Za'atar cauliflower

1tbsp lemon juice
2tbsp olive oil
5 Medjool dates, cut into thin strips
3tbsp pomegranate seeds
2tbsp flat-leaf parsley, finely chopped
¼tsp salt

How it's done

Cauliflower

Mix the cauliflower, oil, za'atar and salt in a bowl and transfer to an oven tray lined with baking paper.

Za'atar cauliflower

Mix the cauliflower with the lemon juice and the remaining ingredients, serve while still warm.
