On many occasions I've put a lot of effort into a dessert only to have lots of it left over because the main course was too filling. This shouldn't be a problem with this pear dessert.

The original recipe with guaranteed success is for 2 people. Altering the number of portions may result in alternate results. Please note that the existing quantities are not automatically adjusted in the text.

1tbsp coconut palm sugar
1 vanilla pod, cut open lengthwise, seeds scraped out
1tbsp maple syrup
1tsp coconut oil, liquid
4 pears (small and ripe), halved, core removed
2tbsp chopped pistachios
50g dark chocolate, crumbled

How it's done

Mix together the coconut palm sugar, vanilla seeds, maple syrup and coconut oil to form a paste. Glaze the cut sides of the pears with the paste, place the pears in an ovenproof dish, add the scraped-out vanilla pods.

Bake for approx. 30 mins. in the centre of an oven preheated to 180°C.

Put the chocolate into a small bowl and melt over a hot bain-marie. Decorate the pears with the liquid chocolate.

Tip: Serve with coconut yoghurt or ice cream.
