1dl water
8 kumquats, rinsed with hot water, dabbed dry, sliced
2tbsp sugar
1sprig thyme
4dl champagne (e.g. Veuve Clicquot Rosé brut), chilled
4sprigs thyme

How it's done

Place the water, sugar, kumquats and thyme in a pan and bring to the boil. Reduce the heat, simmer for approx. 5 mins., allow to cool, remove the thyme.

Divide the kumquats and juice between the glasses just before serving, pour in the champagne. Place a sprig of thyme in each glass.

Good to know
Tip: Instead of kumquats, use 1 mandarin (in segments).
