3 raw pork bratwurst, cut diagonally into pieces approx. 1.5 cm thick
1 onion, thinly sliced
250g carrots, cut diagonally into slices
250g ProSpecieRara Küttiger Rüebli, cut diagonally into slices
1 ½tbsp white flour
1dl water
1dl apple wine
½tsp aniseed
a little ground cloves
2 apples (e.g. Gala), cut into eighths
½tsp salt
a little pepper
Purchase ingredients now

How it's done

Fry the sausages in a frying pan in batches, without any oil, for approx. 3 mins. per batch until crispy. Wipe out the resulting fat with paper towels between each batch. Remove the sausages. Sauté the onion and carrots in the same pan for approx. 5 mins., remove. Toast the flour in the same pan for approx. 5 mins. until hazelnut brown, stirring constantly. Pour in the water and cider, stirring constantly, bring to the boil. Reduce the heat, season with aniseed and ground cloves. Return the vegetables to the pan, cover and simmer over a low heat for approx. 15 mins., add the sausage and apple pieces, simmer for approx. 10 mins. until cooked, season.
