A pizza without any flour. The base is made of potatoes. Smashed potatoes. Boiled potatoes are flattened, baked and used as a pizza base. A great, light alternative to a classic pizza base. You can then top the smashed potato pizza with whatever you fancy. For the pizza sauce, use shop-bought tomato sauce or a mixture of tomato puree with herbs, as we do in this recipe.

Potatoes

2 kg waxy potatoes
salted water, boiling

Pizza base

2 tbsp olive oil

Topping

4 tbsp tomato puree
2 tbsp olive oil
2 garlic cloves, squeezed
½ tsp dried oregano
¼ tsp salt
a little pepper
150 g mini mozzarella balls
200 g baby plum tomatoes, cut in half
1 yellow pepper, cut into strips

To bake

½ bunch basil, finely chopped

Potatoes

Cook the potatoes in their skins in boiling salted water for approx. 20 mins. until soft, drain and allow to cool slightly.

Pizza base

Place the potatoes on a baking tray lined with baking paper and cut crosswise. Place a sheet of baking paper on top, flatten the potatoes with the base of a glass, remove the top sheet of baking paper. Brush the potatoes with oil.

To bake

Approx. 15 mins. on the bottom shelf of an oven preheated to 180 °C. Remove from the oven.

Topping

Combine the tomato puree, oil, garlic and oregano, season, spread on top of the potatoes, top with the mozzarella, tomatoes and peppers.

To bake

Approx. 15 mins. on the bottom shelf of an oven preheated to 180 °C. Remove from the oven, sprinkle with basil.

Good to know
Tip: Instead of baby plum tomatoes and peppers, you can also use courgettes and mushrooms.
