Asparagus

1 tbsp olive oil
500 g white asparagus, peeled, quartered lengthwise
1 tsp sugar
½ tsp salt

Salad

1 dl orange juice
1 tbsp rice vinegar
1 ½ tbsp olive oil
½ tsp cinnamon
½ tsp salt
a little pepper
250 g strawberries, quartered
200 g red chicory, roughly chopped

Beef frying steak

8 thin beef cutlets (e.g. sirloin) (approx. 60 g each)
¼ tsp salt

Asparagus

Heat the oil in a frying pan. Add the asparagus, reduce the heat, sprinkle with sugar, fry for approx. 10 mins. until just soft, turning occasionally. Remove the asparagus, season with salt, allow to cool slightly.

Salad

In a bowl, mix the orange juice with all the other ingredients up to and including the pepper. Add the strawberries and chicory along with the asparagus, mix.

Beef frying steak

Heat the oil in a frying pan. Fry the steaks for approx. 30 secs. on each side. Remove, cut in half, season with salt, serve with the salad.
