Courgette fans

4 courgettes (each approx. 200 g)

Topping

3 tbsp olive oil
½ tsp salt
a little pepper
200 g feta, crumbled
50 g dried tomatoes in oil, thinly sliced
50 g pitted black olives, cut into rings
20 g capers
2 garlic cloves, sliced

Courgette fans

Cut the courgettes into long 5 mm-thick slices, making sure to leave the courgettes intact at one end. Place the courgettes in two grill trays.

Topping

Brush the courgettes with oil, season. Top the courgettes with the feta, tomatoes, olives, capers and garlic.

Charcoal/gas/electric grill

With the lid down, grill the courgettes over/on a medium heat (approx. 200°C) for approx. 20 mins.

Good to know
Tip: Garnish the courgettes with sprigs of thyme.
