Inspired by a popular chocolate bar, this Bircher muesli is so tasty that it's almost like having a dessert for breakfast. Who says Bircher muesli can't be healthy and delicious at the same time? What's more, it's hard to believe that this recipe is vegan and gluten-free!

Muesli

2 ¾ dl almond drink
4 tbsp maple syrup
4 tbsp peanut butter
1 ½ tsp vanilla paste
130 g rolled oats
3 tbsp ground almonds
1 ½ tbsp chia seeds

Date caramel

100 g Medjool dates
120 g coconut cream
3 pinch salt
80 g unsalted peanuts, roasted, roughly chopped

To serve

80 g dark chocolate (64% cocoa), finely chopped

Muesli

Mix the almond milk, maple syrup, peanut butter and vanilla paste in a bowl. Add the oats, almonds and chia seeds, mix. Cover and chill the muesli.

Date caramel

Puree the dates with the coconut cream and salt until smooth. Stir in the peanuts, set aside the date caramel.

To serve

Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate and stir until smooth, allow to cool slightly. Serve the muesli in glasses or small bowls. Top with the date caramel and chocolate.

Good to know
Shelf life: Once prepared, the muesli can be stored in the fridge in a sealed container for approx. 3 days.
