That’s why – every now and then – we like to treat ourselves to an exotic breakfast at home and bring some of that sunshine into our kitchen with these refreshing papaya boats. Ricotta cream

125 g ricotta
1 lime, rinsed with hot water, dabbed dry, grated zest, all of the juice set aside
1 tsp liquid honey

Papaya boats

2 papayas, halved, deseeded
4 tbsp Granola
125 g blackberries
4 figs, cut into wedges
1 banana, sliced
4 tsp white almond cream

Ricotta cream

Puree the ricotta, lime zest and honey until smooth.

Papaya boats

Drizzle the papayas with the reserved lime juice, plate up. Top with granola, fruit and almond butter, fill with the ricotta cream, serve immediately.
