An idea for a quick and delicious meal. This vegetarian sandwich tastes every bit as good as the popular tuna sandwich. You’ll be amazed at how a simple can of chickpeas can be turned into something so tasty. This recipe contains everything you love about a sandwich – soft bread, creamy filling and crunchy vegetables.

Filling

1 tin chickpeas (approx. 215 g), rinsed, drained
4 tbsp vegan mayonnaise
1 tbsp tomato puree
1 tbsp chives, finely chopped
½ tsp dried basil
½ tsp dried oregano
½ tsp dried tarragon
a little Tabasco sauce
salt and pepper to taste
4 cornichons, cut into cubes

Sandwiches

8 slice bread (approx. 320 g)
8 lettuce leaves
4 cornichons, sliced lengthwise

Filling

In a food processor, roughly blitz the chickpeas and all the other ingredients up to and including the Tabasco, season. Mix in the diced cornichons.

Sandwiches

Cover the slices of bread with lettuce leaves, spread the filling and cornichons on top of four of the slices, cover with the remaining slices, press down gently.
