4 glasses, each approx. 300 ml, One airtight bottle holding approx. 500 ml

Lime syrup
Bring the water to the boil with the lime zest, lime juice (approx. 150 ml) and sugar while stirring. Reduce over a medium heat to a syrupy consistency for approx. 20 mins. While still boiling hot, pour the syrup through a sieve into the clean, warmed bottle and fill to just below the rim. Seal immediately and leave to cool.
Spritzer
Blend the water with the basil until smooth, pour through a fine sieve into glasses. To each glass add 1 tbsp of syrup, lime juice and ice cubes, then top up with sparkling water.
| Shelf life: | Store the lime syrup in a cool, dark place for approx. 2 months. Once opened, keep the bottle in the fridge and consume the syrup quickly. |
