A cobbler is so easy to make. The fruit is baked in an ovenproof dish under a layer of cobbler dough. The topping is a combination of biscuit dough and shortcrust pastry. While in the oven, the stewed fruit releases its concentrated juice, which results in a wonderful fruit sauce that goes beautifully with the cobbler. A scoop of ice cream or vanilla custard make the perfect accompaniment to this sociable dessert. It's a guaranteed winner!

Plums

600 g plums, cut into slices
120 g sugar
2 tsp Maizena cornflour
¼ tsp bourbon vanilla powder
¼ tsp cinnamon

Cobbler dough

200 g white flour
30 g sugar
2 tsp baking powder
¼ tsp bourbon vanilla powder
1 pinch salt
2 ½ dl full cream

One wide-bottomed ovenproof dish (holding approx. 1 ½ l), greased

Plums

Mix the plums with the cornflour, sugar, vanilla and cinnamon in the prepared dish.

Cobbler dough

Mix the flour, sugar, baking powder, vanilla and salt in a bowl. Pour in the cream, mix well with a wooden spoon, spread on top of the plums.

To bake

Approx. 45 mins. in the centre of an oven preheated to 180°C. Remove, allow to cool slightly.

Good to know
Serve with: Vanilla ice cream or vanilla custard.
