Chocolate

100 g dark chocolate, finely chopped
100 g butter, cut into pieces

Batter

200 g white flour
3 tbsp sugar
1 tsp dry yeast
1 pinch salt
2 fresh eggs
1 ¼ dl milk

Waffles

clarified butter

Compote

250 g figs, quartered
1 tbsp lemon juice
100 g Fior di Latte ice cream

Chocolate

Place the chocolate and butter in a thin-sided bowl. Suspend over a gently simmering bain-marie; the bowl must not touch the water. Melt the chocolate and butter, stir until smooth, set aside.

Batter

Mix the flour, sugar, yeast and salt in a bowl. Beat the eggs, whisk together with the milk, the reserved chocolate & butter mixture and the flour to create a smooth batter. Cover and leave to stand at room temperature for approx. 45 mins.

Waffles

Heat up the waffle iron. Brush with a little clarified butter. Spoon 2 heaped tablespoons of batter onto the waffle iron for each waffle, cook the waffles for approx. 5 mins., remove and keep warm. Repeat these steps with the remainder of the batter.

Compote

Mix the figs and lemon juice in a pan, bring to the boil. Reduce the heat, cover and simmer for approx. 3 mins., serve the warm fruit and resulting juice with the waffles. Top with ice cream.
