200 g unsalted peanuts
200 g sugar
½ tsp bourbon vanilla powder
¼ tsp cinnamon
1 dl water

How it's done

Place the peanuts, sugar, vanilla, cinnamon and water in a pan, bring to the boil without stirring. Reduce the heat and simmer for approx. 10 mins., stirring occasionally until the water has evaporated and the sugar is dry. Continue to stir with a wooden spoon until the sugar melts again and coats the peanuts (approx. 5 mins.). Spread the peanuts on a baking tray lined with baking paper, leave to cool.

Shelf life: Keep in an airtight tin for approx. 1 month.
Tip: Beautifully wrapped, they make an ideal gift.
Tip: For a spicy version, replace the cinnamon and vanilla with ½ tsp of fleur de sel and 2 tsp of piment d'Espelette.
