Chicken breasts

2tbsp toasted sesame oil
1tbsp soy sauce
1tsp lemon juice
½tsp paprika
½tsp ground coriander seeds
¼tsp cayenne pepper
½tsp salt
4 chicken breasts (each approx. 170 g)

Oranges

3 oranges
50g pitted dates, sliced lengthwise
1tbsp shelled pistachios, coarsely chopped
Purchase ingredients now

One wide roasting tin.

How it's done

Chicken breasts

Combine the oil with the remaining ingredients and a little salt. Coat the chicken breasts with the mixture.

Oranges

Slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Cut the oranges into slices, arrange in the roasting tin. Add the chicken breasts. Scatter the dates and pistachios over the top.

Roast for approx. 25 mins. in the centre of an oven preheated to 200°C.

Carve the chicken breasts and serve with the oranges.
