To poach the pears

4 pears, peeled, halved, cored
2 tsp lemon juice
5 dl red wine
3 tbsp sugar
2 star anise

Ham sauce

200 g sour single cream
100 g ham in slices, finely chopped
2 tbsp flat-leaf parsley, finely chopped
1 tbsp chives, finely chopped
¼ tsp salt
a little pepper

To poach the pears

Brush the pears with the lemon juice. Bring the wine to the boil in a pan along with the sugar and star anise. Add the pears, simmer over a low heat for approx. 5 mins. until just soft, turning once. Cover the pears and leave to cool in the poaching liquid.

Ham sauce

Mix the sour single cream, ham and herbs, season, serve with the pears.

Good to know
Tip: Sprinkle with 2 tbsp of coarsely chopped smoked almonds.
Prepare: Leave the pears to infuse in the poaching liquid overnight. This will give them a beautiful, intense colour.
