Mushrooms

oil for frying
300g mixed mushrooms (e.g. king oyster, chanterelle), chopped
1 garlic clove, pressed
3sprigs thyme, leaves torn off
½tsp salt
a little pepper

Mini pizzas

800g pizza dough
150g grated mozzarella
2sprigs thyme, leaves torn off

How it's done

Mushrooms

Heat the oil in a pan. Fry the mushrooms in batches for approx. 3 mins., then remove from the pan. Reduce the heat, add the garlic and thyme, cook for approx. 1 min., return the mushrooms to the pan, season.

Mini pizzas

Divide the dough into approx. 20 portions, shape into balls, place on two baking trays lined with baking paper, flatten a little. Top with the mushrooms, cheese and thyme.

To bake

Approx. 15 mins. in an oven preheated to 220°C (convection).
