½ tbsp oil for frying
1 courgette, cut into approx. 5 mm slices
300 g gnocchi
100 g baby spinach
2 tbsp pine nuts
30 g butter

How it's done

Heat the oil in a non-stick frying pan. Fry the courgette for approx. 10 mins., turning occasionally, then remove. Fry the gnocchi in the same pan for approx. 5 mins., add the spinach, pine nuts and courgette, cook for approx. 5 mins., then plate up. Melt the butter in the same pan until it turns frothy and tastes nutty, drizzle over the gnocchi.

Good to know
Tip: Sprinkle with a little coarsely grated pecorino romano.
