Charcoal/gas/electric grill:

2 broccoli (each approx. 600 g), quartered
2tbsp olive oil
¼tsp salt

Couscous

2tbsp herbal vinegar
2tbsp olive oil
2tsp Dukkah (spice mix)
¼tsp salt
50g almonds, toasted, coarsely chopped
2tbsp dark sultanas

Charcoal/gas/electric grill:

250g halloumi, cut into approx. 1 cm sticks

How it's done

Charcoal/gas/electric grill:

Brush the broccoli with oil, season with salt, grill on all sides over/on a low heat (approx. 150°C) for approx. 15 mins. Allow the broccoli to cool slightly, chop finely.

Couscous

Combine the vinegar and oil, season. Mix the broccoli, almonds and sultanas.

Charcoal/gas/electric grill:

Grill the cheese over/on a medium heat for approx. 3 mins. on each side, serve with the broccoli couscous.

Good to know
Note: Use another type of grilled cheese instead of halloumi.
