A classic. And a firm favourite with children. You can't go wrong with letter soup. It's always fun to see which words you can make up using the letters on your spoon. It's basically edible scrabble. Simply add some grated vegetables to make your soup more colourful and appetizing. Not to mention full of vitamins.

1 ½litres vegetable bouillon
½ green leek (or 2 spring onions), cut into thin rings
2 carrots, coarsely grated
80g soup letters
Purchase ingredients now

How it's done

Bring the stock to the boil in a large pan. Add the leek, carrots and soup letters, cook the soup for approx. 7 mins.
