2tbsp olive oil
1 lime, rinsed with hot water, dabbed dry, use grated zest and juice
½tsp salt
a little pepper
120g edamame (e.g. Karma), rinsed, drained
1 mango, diced
½ cucumber, diced
Purchase ingredients now

How it's done

Combine the oil, lime zest and juice in a bowl, season. Add the edamame, mango and cucumber, mix together.

Good to know
Tip: Mix ½ bunch of roughly chopped coriander in with the salad.
