Just WOW! If you don't fall in love with this recipe straight away then you've clearly never tried French toast before! For those of you who don't know, French toast is made of sliced bread (usually a relatively soft, toasting bread), which is then dipped in a mix of beaten egg and milk, fried on both sides in rather a lot of oil and/or butter until golden brown and then ideally dipped in a mix of cinnamon and sugar or drizzled with maple syrup. As good as this sounds, it is just as tasty in vegan form. This includes a banana & almond filling – which once fried guarantees a warm and creamy surprise with every bite – and bread fried in coconut oil and a little maple syrup, which is also incredibly moreish on its own. You simply have to try it – and enjoy every bite!

Filling

1 ½ bananas
1 tbsp dark almond cream
2 tsp maple syrup or runny honey
2 pinch Himalayan salt
¼ tsp cinnamon

Toasties

4 slice whole-grain toast bread
2 tsp maple syrup or runny honey
2 tsp coconut oil

Toppings

20 g blueberries
½ banana, sliced
1 tbsp almonds, toasted, chopped
a little maple syrup or runny honey

How it's done

Filling

Finely mash the bananas with a fork. Mix in the almond butter, honey, salt and cinnamon.

Toasties

Spread the filling over two slices of bread, top each with another slice of bread and press down gently.

Heat the maple syrup and coconut oil in a non-stick frying pan, fry the toasties for 2-3 mins. on each side.

Toppings

Plate up the toasties, cut in half if desired, top with the berries, bananas and almonds, drizzle with maple syrup. Serve lukewarm.

Good to know
Tip: Instead of using almond butter in the filling, you can also use cashew or peanut butter. Serve fresh raspberries with the cashew butter and fresh strawberries with the peanut butter.
