How it's done
Mix the oil and vinegar in a large bowl, season.
Heat the oil in a non-stick frying pan, sauté the sweet potato for approx. 10 mins., season, allow to cool slightly. Add to the dressing along with the pomegranate seeds, apple and rocket, mix.
|Tip:||Sprinkle 1 tbsp of coarsely chopped walnuts over the salad.|
