1tbsp olive oil
2tbsp white wine vinegar
¼tsp salt
a little pepper


1tbsp olive oil
1 sweet potato (approx. 400 g), diced
¼tsp salt
a little pepper
140g pomegranate seeds
1 apple (e.g. Gravenstein), diced
90g rocket
Purchase ingredients now

How it's done


Mix the oil and vinegar in a large bowl, season.


Heat the oil in a non-stick frying pan, sauté the sweet potato for approx. 10 mins., season, allow to cool slightly. Add to the dressing along with the pomegranate seeds, apple and rocket, mix.

Good to know
Tip: Sprinkle 1 tbsp of coarsely chopped walnuts over the salad.
