Chicken

2 chicken breasts (approx. 160 g each), halved crosswise
½tsp salt
a little pepper
a little olive oil

Dressing

100g orange jam
1tbsp hot chilli sauce Sriracha
2tbsp ketchup
2tbsp water
¼tsp salt
Purchase ingredients now

How it's done

Chicken

Season the chicken. Heat the oil in a frying pan and fry the chicken for about 2 mins. on each side, remove.

Dressing

Put the marmalade, Sriracha, ketchup and water into the same pan, bring to the boil, season with salt. Return the chicken to the pan and heat gently.

Good to know
Tip: Put ¼ tsp of dried, ground ginger into the sauce and scatter over a few freshly-picked coriander leaves.
Note: Use sambal oelek instead of Sriracha.
Serve with: Basmati rice
