How it's done
Season the chicken. Heat the oil in a frying pan and fry the chicken for about 2 mins. on each side, remove.
Put the marmalade, Sriracha, ketchup and water into the same pan, bring to the boil, season with salt. Return the chicken to the pan and heat gently.
|Tip:||Put ¼ tsp of dried, ground ginger into the sauce and scatter over a few freshly-picked coriander leaves.|
|Note:||Use sambal oelek instead of Sriracha.|
|Serve with:||Basmati rice|
