Fish fillets

1tbsp olive oil
2 Royal cod fillets (MSC) (approx. 200 g each)
½tsp salt
a little pepper

Mediterranean salsa

250g different coloured cherry tomatoes, quartered
50g Kalamata olives, pitted
30g capers
¼tsp salt

How it's done

Fish fillets

Heat the oil in a non-stick frying pan, fry the fish fillets for approx. 3 mins. on each side, season and keep warm.

Mediterranean salsa

Place the tomatoes, olives and capers in the same pan, stir fry for approx. 5 mins., season with salt. Spoon the salsa over the fish, serve.

Good to know
Tip: Garnish with 2 sprigs of finely chopped basil.
Serve with: Boiled potatoes or rice
