1tbsp salted peanuts, finely chopped
½tbsp black sesame seeds
1 ½tbsp cane sugar
½tsp ground coriander seeds
2tsp ginger, finely grated
1 red chilli, deseeded, cut into thin rings


2 limes, all of the juice
1dl peanut oil
2tbsp sesame oil
2tbsp soy sauce

How it's done


Toast the peanuts and sesame seeds in a frying pan for approx. 2 mins. without adding any oil, transfer to a small bowl. Mix in the cane sugar, coriander, ginger and chilli.


Combine the lime juice, peanut oil, sesame oil and soy sauce, mix in the spices.
