The aronia berry is a native berry that is considered to be a real miracle worker. It is packed full of vitamins, minerals and trace elements. The bushes make popular ornamental plants and can be found in many Swiss gardens. The berries taste very unusual fresh from the bush. They are better once processed, e.g. dried or as a juice, which is truly delicious mixed with apple juice.

2 carrots, finely grated
200 g fine whole-grain rolled oats
60 g dried apricots (sweet), finely chopped
40 g hazelnuts, coarsely chopped
3 tbsp linseed
2 tbsp dried aronia berries
4 tbsp liquid honey
1 ½ tbsp rapeseed oil
¼ tsp salt

How it's done

Bars

In a bowl, mix the carrots with all the remaining ingredients. Knead well by hand until the ingredients have combined to form a compact mass. Transfer the mixture to the prepared tin and smooth down.

To bake

Approx. 40 mins. in the centre of an oven preheated to 160°C. Turn the heat up to 180 °C and bake for a further 10 mins. Remove from the oven, leave to cool in the tin, cut into 10 bars.

Shelf life: Store in an airtight container for approx. 1 week.
