Batter

225g white flour
3tbsp sugar
¼tsp salt
2 ½dl milk
6 fresh egg yolks
6 fresh egg whites
2pinches salt
1 apple, cut into approx. 1 cm cubes
200g frozen plums, quartered

To bake

2tbsp icing sugar

For a large rectangular baking tray, greased or lined with baking paper

How it's done

Batter

Mix the flour, sugar and salt in a large bowl. Pour in the milk, whisk together to form a smooth batter. Stir the egg yolks into the batter. Beat the egg whites with the salt until stiff. Place the egg white mixture on top of the batter, carefully fold in using a rubber spatula. Transfer the pancake mixture to the prepared tray, arrange the fruit on top.

To bake

Approx. 10 mins. in the centre of an oven preheated to 220°C. Remove from the oven, tear the pancake into pieces using two spatulas, dust with icing sugar.
