2tsp coarse-grain mustard
4tbsp rapeseed oil
3tbsp white balsamic vinegar
1tsp liquid honey
salt and pepper to taste


1tin pear halves (230 g), drained
200g plain cottage cheese plain, (Hirz)
30g walnut kernels, toasted, coarsely chopped
½bunch chives, finely chopped
2 white chicory, whole leaves
2 red chicory (e.g. Trevisano), whole leaves
Purchase ingredients now

How it's done


Mix all the ingredients together well, season.


Cut two pear halves lengthways into slices, set aside. Chop the remaining pears into cubes, mix with the nuts, chives and cottage cheese. Stir in half of the salad dressing.

Place the chicory leaves and pear slices around the edge of the plate and drizzle over the remaining salad dressing. Serve the cottage cheese in the middle.

Good to know
Serve with: Toasted baguette.
