Salmon tartare

300g smoked salmon, cut into slices, finely diced
2 shallots, finely chopped
2tbsp lime juice
2tbsp dry white vermouth
1tbsp capers, roughly chopped
½bunch dill, finely chopped
pepper, to taste

Apple salad

2 red-skinned apples, halved, cores removed, cut into slices
1tbsp white balsamic vinegar
1tbsp rapeseed oil
salt and pepper to taste
20g hazelnuts, toasted, coarsely chopped

How it's done

Salmon tartare

Carefully mix together all of the ingredients, refrigerate until ready to serve.

Apple salad

Mix the apple slices immediately with the balsamic and oil, season.

To serve, plate up the tartare and apple salad, sprinkle with the hazelnuts, garnish with dill as desired.
