Roasted vegetables

120g chickpeas (e.g. Karma organic chickpeas)
1 courgette, sliced
1 ½tbsp Dukkah (spice mix)
2tsp maple syrup

To serve

50g dried tomatoes
150g Karma Hummus mit Zitrone und Petersilie
90g rocket

Dressing

150g Karma Jocos nature
1tbsp peppermint, finely chopped
1tbsp apple vinegar
½tbsp Dukkah (spice mix)

How it's done

Roasted vegetables

Mix all the ingredients in a bowl, spread on a baking tray lined with baking paper. Roast for approx. 30 mins. in the centre of an oven preheated to 200°C. Allow to cool slightly.

To serve

Plate up the roasted vegetables. Top with the tomatoes and all the other ingredients up to and including the rocket.

Dressing

In a bowl, mix the coconut yoghurt with all the other ingredients up to and including the dukkah, drizzle on top of the salad.
