Pear & persimmon

1 pear, cut into pieces
1 persimmon, diced
1 litre water
3 star anise

Pomegranate

1 pomegranate, seeds removed
2 cm ginger sliced
2 cinnamon sticks
1 litre water

Tangerine

1 tangerine, segmented
1 cinnamon stick
1 vanilla pod, cut open lengthwise, seeds scraped out
1 litre water

How it's done

Pear & persimmon

Place the pear, persimmon and star anise in a jug, fill with water. Cover and leave to infuse in the fridge for approx. 1 hr.

Pomegranate

Place the pomegranate seeds, ginger and cinnamon in a jug, fill with water. Cover and leave to infuse in the fridge for approx. 1 hr.

Tangerine

Place the tangerine, cinnamon, vanilla pod and seeds in a jug, fill with water, mix well. Cover and leave to infuse in the fridge for approx. 1 hr.

Good to know
Tip: To segment the tangerine, slice off the top and bottom, then peel all round the fruit down to the flesh. Using a sharp knife, cut out the segments between the white membranes.
