Rice

300 g long grain rice
salted water, boiling

Curry

a little oil, for frying
750 g coloured peppers, cut into strips
300 g pineapples, cut into pieces
2 apples, cut into pieces
2 tbsp curry powder
7 ½ dl coconut milk
¾ tsp salt
a little pepper

Rice

Cook the rice in salted water until almost soft. Drain the rice, cover and keep warm.

Curry

Heat the oil in a non-stick frying pan. Stir fry the pepper, pineapple and apple for approx. 2 mins., add the curry and stir fry for approx. 1 min. Pour in the coconut milk, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season.

Good to know
Tip: Garnish with coriander leaves before serving.
