Spinach

½ tbsp olive oil
150 g baby spinach

Medallions

500 g Betty Bossi Rösti fixfertig
200 g salmon fillet, finely chopped
2 egg
2 tbsp white flour
½ tsp salt
a little pepper

To fry

2 tbsp olive oil

Spinach

Heat the oil in a large pan, add the spinach and wilt over a medium heat. Drain the spinach, cut finely, add to a bowl.

Medallions

Mix the roesti and add all ingredients up to and including the pepper to the spinach, mix well.

To fry

Heat the oil in a non-stick frying pan. Add portions of approx. 2 tbsp, reduce the heat, fry the medallions for approx. 4 mins. on each side over a medium heat.

Good to know
Serve with: Horseradish sauce
