1 tbsp tomato puree
1 tbsp sherry
2 tbsp soy sauce
1 garlic clove, pressed
½ tbsp liquid honey
½ tsp ginger, finely grated
¼ tsp cayenne pepper
¼ tsp mustard seeds, crushed
1 pinch cinnamon
1 pinch ground cloves

Mix the tomato puree with all the other ingredients.

Good to know
Tip: Cover half of the marinade and place in the fridge. Coat approx. 600 g of meat (e.g. steaks or cutlets) or chicken with the remaining marinade and leave in the fridge to marinate for approx. 3 hours. Wipe off the marinade, season the meat, barbecue and coat with the reserved marinade after barbecuing.
